
Summer just got darker. That’s because the August issue of Beer Advocate magazine is storming into fine barrooms and mailboxes everywhere. Even as we speak! Inside, you’ll find an interview with the fine gentleman pictured above – Paul Philippon, founder and brewmaster of the Duck-Rabbit Craft Brewery.
I met up with Paul at this summer’s American Craft Beer Fest in the Seaport. He’d driven all the way up from North Carolina to ply the good people of Boston with some damn fine beers. The good people of Boston were more than willing to be plied. It’s tough to argue with Paul’s Barleywine, Porter, and Rabid Duck Russian Imperial Stout.
Several weeks later, the fruits of that bout of early-afternoon drinking have finally manifested themselves. The interview’s on the streets (and this here internet). In it, Paul talks about the importance of finding a niche, and the benefits of perfecting your recipes on somebody else’s dime. And he fires away at the doubters who didn’t think dark, flavorful beer could flourish in the southern heat: “Anyone that’s willing to pay the prices that any microbrewery has to charge, and that values this kind of product, is not going to be scared away by the fact that there’s flavor in it. No matter what the temperature is outside.”
